Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, typically about 8-10 minutes. Stir occasionally to prevent sticking.
While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat.
Slice the cooked sausages into bite-sized pieces. Once the oil is hot, add the sausage pieces to the skillet and sauté for about 5 minutes, or until they are heated through and slightly golden.
Once the pasta is cooked, drain it, reserving about 1/2 cup of the pasta water. Add the drained pasta directly to the skillet with the sautéed sausage.
Toss the pasta with the sausage, allowing the oil and sausage flavor to coat the pasta evenly. If the mixture seems dry, add a little bit of the reserved pasta water until desired consistency is reached.
In a separate pan, fry the two eggs in a bit more olive oil (if desired) until the whites are set but the yolks are still runny, about 3-4 minutes.
Remove the skillet from heat, then stir in the Parmesan cheese, mixing well to combine it with the pasta and sausage. Season with salt and pepper to taste.
Plate the pasta and sausage mixture, then top each serving with a fried egg on top. Sprinkle a little extra Parmesan cheese if desired.
Serve immediately and enjoy your Pasta with Sausage and Eggs!
