In a small bowl, combine 4 cups of low-fat Greek yogurt with 4 tablespoons of honey. Stir until the honey is evenly mixed into the yogurt.
Wash the mixed berries thoroughly under cold water and pat them dry with a paper towel.
In a clear glass or serving bowl, add about 1/2 cup of the honey-yogurt mixture at the bottom.
Add a layer of mixed berries on top of the yogurt, approximately 1/4 cup.
Sprinkle approximately 2 tablespoons of granola over the berries.
Add a small handful of chopped walnuts, about 1 tablespoon, on top of the granola.
Repeat the layering process with another 1/2 cup of yogurt, 1/4 cup of berries, 2 tablespoons of granola, and 1 tablespoon of walnuts.
Continue layering until all ingredients are used, finishing with a layer of mixed berries and a sprinkle of granola and walnuts on top for garnish.
Drizzle a bit more honey on top of the parfaits for extra sweetness, if desired.
