Greek Yogurt & Mixed Berry Parfait with Toasted Granola & Walnuts

Ingredients

  • 750 g Greek yogurt (2% fat)
  • 150 g toasted granola
  • 400 g mixed berries
  • 75 g walnuts, chopped
  • 5 tbsp honey
  • 1 lemon (optional) lemon zest
  • few leaves (optional) mint leaves

Instructions

Wash and prepare the mixed berries. Hull and slice the strawberries if using. Set aside in a bowl.

In six serving glasses or bowls, place about 125 g of Greek yogurt at the bottom of each.

Top the yogurt with approximately 25 g of mixed berries per serving.

Sprinkle about 12.5 g of toasted granola over the mixed berries in each glass.

Add 12.5 g of chopped walnuts to each parfait for crunch and flavor.

Drizzle about 1 tbsp of honey over each parfait. Adjust according to taste if needed.

If desired, sprinkle some lemon zest over the top of each parfait for a fresh citrus note.

Garnish with a few mint leaves for a refreshing aroma and color.
