Preheat a grill pan or panini press over medium heat.
Drizzle or spread olive oil or butter on one side of each slice of ciabatta or sourdough bread.
On the un-oiled side of two slices of bread, layer half of the prosciutto (20 g), half of the mozzarella (30 g), and a few arugula leaves. If using, add tomato slices. Add a pinch of salt and pepper to taste.
Top each with another slice of bread, oiled side out.
Carefully place the sandwiches on the preheated grill pan or panini press. Grill for about 4-5 minutes on each side, or until the bread is golden brown and the cheese is melted.
Remove the panini from the grill. Let them cool for a minute, then slice them in half and serve warm.
