Preheat your panini press or grill pan to medium-high heat.
Slice the ciabatta rolls in half horizontally.
Drizzle 1 tablespoon of olive oil evenly over the inside halves of the ciabatta pieces.
Layer 2 slices of prosciutto on the bottom half of each ciabatta roll.
Cut the mozzarella into thin slices and place 50 grams on top of the prosciutto for each sandwich.
Add a handful of arugula (about 1/2 cup) evenly on top of the mozzarella for each sandwich.
Sprinkle a pinch of salt and black pepper over the arugula on each sandwich.
Cover with the top half of the ciabatta roll.
Brush the outside of each sandwich with the remaining olive oil to help with crisping while grilling.
Place the sandwiches in the panini press or on the grill pan, pressing down gently. Grill for about 3-5 minutes on each side, or until the bread is golden brown and the cheese is melted.
Remove the sandwiches from the heat, let them cool for a minute, then slice in half and serve warm.
