Ingredients

  • 2 slices Whole-grain bread or panini
  • 1 cup Grilled zucchini & red pepper
  • 1 oz Goat cheese
  • 1 tsp Olive oil
  • 1 cup Mixed greens
  • to taste optional Salt
  • to taste optional Black pepper

Instructions

Preheat a grill pan or a skillet over medium heat.

Brush one side of each bread slice with olive oil. This will be the exterior side when grilling.

On the un-oiled side of one bread slice, spread the goat cheese evenly.

Top the goat cheese with the grilled zucchini and red pepper slices.

Place the second slice of bread on top, oiled side up.

Place the sandwich on the preheated grill pan. Press down gently and grill for 2-3 minutes until the bread is golden brown and crispy.

Flip the sandwich and grill the other side for another 2-3 minutes until the bread is crispy and the cheese is slightly melted.

Remove from heat and let it cool for a minute before cutting it in half.

Serve the panini warm, accompanied by a side salad of mixed greens, with a light drizzle of olive oil, if desired. Season the salad with salt and black pepper to taste.
