Slice the roasted beets into thin wedges and set aside.
Chop the grilled chicken breast into bite-sized pieces.
In a small pan over medium heat, toast the walnuts for about 2-3 minutes until they are lightly browned and fragrant. Remove from heat and set aside.
In a large mixing bowl, combine the mixed greens, sliced beets, grilled chicken, and toasted walnuts.
Crumble the goat cheese over the salad.
Drizzle the olive oil vinaigrette over the salad and toss gently to combine all the ingredients.
Season the salad with salt and black pepper to taste.
Divide the salad into two servings and serve immediately.
