Thinly slice the beef against the grain into 1/4 inch thick strips.
Deseed and thinly slice the bell peppers and slice the onion into thin strips.
Mince the garlic cloves and finely chop the ginger piece.
In a large pan or wok, heat the olive oil over medium-high heat.
Add the sliced beef to the pan, season with salt and black pepper, and stir-fry for about 5-7 minutes until browned. Remove the beef from the pan and set aside.
In the same pan, add the garlic, ginger, sliced onions, and bell peppers. Stir-fry for another 5 minutes until the vegetables are tender-crisp.
Return the beef to the pan and add soy sauce. Stir well to combine all ingredients and cook for an additional 2 minutes.
Adjust seasoning if necessary and serve hot.
