Ingredients

  • 5 oz Thinly sliced beef (flank or sirloin)
  • 1 piece Red bell pepper, sliced
  • 1 piece Small zucchini, sliced
  • 0.5 piece Small onion, sliced
  • 1 tbsp Olive oil or avocado oil
  • 1 tbsp Coconut aminos
  • 1 clove Garlic, minced
  • to taste N/A Salt
  • to taste N/A Pepper
  • pinch N/A Chili flakes

Instructions

In a large skillet or wok, heat 1 tablespoon of olive oil or avocado oil over medium-high heat until shimmering.

Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant.

Add the sliced onion and cook for 1-2 minutes until it starts to soften.

Increase the heat to high and add the sliced beef. Stir-fry for about 3-4 minutes until the beef is browned and cooked through.

Add the sliced red bell pepper and zucchini, and continue to stir-fry for another 3-4 minutes until the vegetables are tender-crisp.

Pour in the coconut aminos and add a pinch of chili flakes (if using), and stir everything together until well combined. Season with salt and pepper to taste.

Remove from heat and serve the stir-fry hot, either on its own or over a bed of rice or noodles if desired.
