Peel and devein the shrimp. Set aside.
Wash the bok choy thoroughly under cold running water. Chop into bite-sized pieces and set aside.
Mince the garlic cloves and ginger finely.
In a large skillet or wok, heat olive oil over medium-high heat.
Add minced garlic and ginger to the skillet, stir-fry for about 30 seconds until fragrant.
Add the shrimp to the skillet, season with salt and black pepper to taste. Stir-fry for 3-4 minutes or until shrimp turns pink and opaque.
Remove the shrimp from the skillet and set aside.
In the same skillet, add the chopped bok choy. Stir-fry for 2-3 minutes or until the greens are tender.
In a small bowl, mix soy sauce, honey, sesame oil, and red pepper flakes.
Return the shrimp to the skillet along with the sauce mixture. Stir well to coat the shrimp and bok choy evenly.
Cook for another 2 minutes, allowing the sauce to bubble and thicken slightly.
Remove from heat and serve immediately. Enjoy your garlic shrimp with bok choy stir-fry!
