Heat one tablespoon of olive oil in a large skillet over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned, about 7-8 minutes.
Season the cooked ground beef with salt and black pepper. Stir well and set aside.
While the beef is cooking, chop the lettuce and tomatoes. Shred the cheese if needed.
In a large salad bowl, combine the chopped lettuce, diced tomatoes, and shredded cheese.
Add the cooked ground beef to the salad bowl and toss everything together gently.
Drizzle taco sauce over the salad and toss again to combine all the flavors.
Serve each portion with a dollop of sour cream on top.
