Ingredients

  • 3 cup nonfat Greek yogurt
  • 2 cup mixed berries (strawberries, blueberries, raspberries)
  • 3/4 cup granola
  • 3 tbsp honey
  • 1 tsp lemon zest

Instructions

In a medium-sized bowl, mix the mixed berries gently together. If any strawberries are particularly large, halve or quarter them for more uniform pieces.

In a separate small bowl, add the honey and lemon zest. Stir well to combine into a lemon honey glaze.

In a clear glass or parfait cup, spoon 1/2 cup of Greek yogurt at the bottom.

Top the yogurt with a layer of the mixed berries, approximately 1/4 cup.

Drizzle a small spoonful (about 1 tsp) of the lemon honey glaze over the berries.

Sprinkle about 2 tablespoons of granola over the honey-glazed berries.

Repeat the layers with another 1/2 cup of Greek yogurt, followed by 1/4 cup of mixed berries, another drizzle of honey glaze, and 2 tablespoons of granola.

Continue layering until you fill the glass, ending with a top layer of berries and a final drizzle of honey.

If desired, add an additional sprinkle of lemon zest on top for extra brightness and garnish.

Serve immediately to enjoy the parfait while the granola is still crunchy.
