Crack the eggs into a bowl. Add a pinch of salt and pepper, and whisk them well until the yolks and whites are fully combined.
Heat 1 teaspoon of olive oil in a non-stick skillet over medium heat. Add the baby spinach and sauté for 2-3 minutes until wilted. Remove from the skillet and set aside.
In the same skillet, add the remaining teaspoon of olive oil. Pour in the eggs and let them sit without stirring for about 30 seconds so they start to set.
Gently stir the eggs, lifting and folding them from the edges to the center. Add the orange zest and segments into the eggs halfway through cooking them. Continue to cook until the eggs are just set but still creamy.
Remove the skillet from heat. Adjust the seasonings with more salt and pepper if needed.
Slice the avocado and arrange it around the edge of a serving plate. Spoon the scrambled eggs into the center and layer the sautéed spinach over the top. Garnish with chopped fresh chives.
