Preheat your oven to 400°F (200°C).
Peel and cube the sweet potato into small chunks. Spread them on a baking sheet and toss with olive oil, salt, and pepper.
Roast the sweet potato in the preheated oven for about 20-25 minutes or until tender, stirring halfway through.
While the sweet potato is roasting, heat a small pan over medium heat and sauté the chopped kale with a splash of water until just wilted, about 3-4 minutes. Season with a pinch of salt and pepper.
In a bowl, arrange the cooked brown rice as the base. Add the grilled chicken breast, roasted sweet potato, and sautéed kale on top.
Drizzle the tahini-lemon dressing over the entire bowl. Optionally, sprinkle some extra salt and pepper to taste.
Serve warm and enjoy your Chicken Buddha Bowl!
