If not already done, grill the chicken breast until fully cooked. Set aside and let it rest.
Peel and cube the sweet potato. Toss with 1 tbsp of olive oil, salt, and pepper. Roast in a preheated oven at 400°F (200°C) for about 20 minutes or until tender and slightly caramelized. Remove from oven and let it cool slightly.
Prepare 3/4 cup of cooked brown rice as per package instructions, if not already cooked. Keep warm.
In a large bowl, combine chopped kale with a pinch of salt. Massage gently for about 2 minutes to soften it.
Slice the rested grilled chicken breast into thin slices.
Assemble the Buddha bowl by placing the cooked brown rice at the bottom. Arrange the kale, roasted sweet potato cubes, and sliced grilled chicken on top.
Drizzle the entire bowl with 2 tablespoons of the tahini-lemon dressing.
Serve the bowl immediately. Optionally, garnish with a sprinkle of sesame seeds or chopped fresh herbs if desired.
