Start by washing the mixed berries thoroughly under cold water. After washing, gently pat them dry with a paper towel to remove excess moisture.
In a small bowl, mix the chia seeds with a bit of water (about 2 tablespoons) and let them sit for about 5 minutes until they begin to form a gel-like consistency.
In a glass or serving bowl, add half of the Greek yogurt as the first layer.
Sprinkle half of the granola over the yogurt layer evenly.
Add half of the mixed berries on top of the granola layer.
Drizzle some honey over the berries for added sweetness.
Add the remaining Greek yogurt as another layer.
Top with the remaining granola, mixed berries, and the chia seed mixture evenly.
Finish by drizzling the remaining honey over the top.
Serve immediately and enjoy your Greek Yogurt Parfait with Berries & Granola.
