Ingredients

  • 2 140 g each Salmon fillets
  • 2 medium (about 400 g) total Sweet potatoes
  • 300 g Green beans
  • 2 tbsp Olive oil
  • 1 whole Lemon
  • 2 cloves Garlic
  • 2 tbsp Fresh dill
  • to taste NA Salt
  • to taste NA Pepper

Instructions

Preheat your oven to 200°C (390°F).

Peel the sweet potatoes and cut them into 1-inch cubes. In a bowl, toss the sweet potatoes with 1 tablespoon of olive oil, salt, and pepper.

Spread the sweet potatoes in a single layer on a baking sheet and roast in the preheated oven for 25-30 minutes, or until tender and golden brown. Stir halfway through cooking.

While the sweet potatoes are roasting, prepare the salmon fillets. Place them on a separate baking dish and drizzle with 1 tablespoon of olive oil.

Squeeze half of the lemon over the salmon fillets and season with minced garlic (1 clove per fillet), salt, and pepper to taste.

Sprinkle fresh dill over the salmon fillets.

Once the sweet potatoes are halfway done, place the salmon into the oven along with them. Bake for 12-15 minutes, depending on the thickness of the fillets, until the salmon is opaque and flakes easily with a fork.

In the meantime, bring a pot of salted water to a boil to steam the green beans. Add the green beans and steam them for about 5-7 minutes, or until bright green and just tender.

Drain the green beans and transfer to a serving dish. Squeeze the remaining half of the lemon over the beans and season with salt and pepper to taste.

Serve the baked salmon alongside the roasted sweet potatoes and steamed green beans. Garnish the dish with extra fresh dill if desired.
