Ingredients

  • 170 g Salmon fillet
  • 1 medium Sweet potato
  • 1 tbsp Olive oil
  • 1 cup Green beans
  • 0.5 whole Lemon
  • 1 clove Garlic
  • 0.75 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tbsp Butter

Instructions

Preheat your oven to 375°F (190°C).

Peel and cut the sweet potato into chunks. Place in a pot of water and boil until tender, about 15-20 minutes.

While the sweet potatoes are boiling, prepare the salmon fillet. Place the fillet on a baking tray lined with parchment paper. Squeeze half a lemon over the salmon, and season with salt and black pepper.

Peel and finely mince the garlic clove. Sprinkle over the salmon fillet.

Place the salmon in the preheated oven and bake for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.

While the salmon is baking, trim and rinse the green beans. Steam the green beans for about 5-7 minutes until they are tender yet crisp.

Once the sweet potatoes are tender, drain and return them to the pot. Add butter, olive oil, and a pinch of salt. Mash the sweet potatoes until smooth and creamy.

To serve, place a portion of sweet potato mash on a plate, alongside the baked salmon fillet, and steamed green beans on the side.
