Preheat the oven to 200°C (400°F).
Wash and peel the sweet potatoes, then cut them into 1-inch cubes.
Place the sweet potato cubes on a baking tray, drizzle with 1 tablespoon of olive oil, and sprinkle with half of the salt and pepper. Toss to coat evenly.
Roast the sweet potatoes in the preheated oven for 25-30 minutes, turning halfway through, until they are tender and slightly caramelized.
While the sweet potatoes are roasting, prepare the salmon by placing the fillets on a separate baking sheet lined with parchment paper.
Drizzle the salmon with 1 tablespoon of olive oil and season with garlic powder, the remaining salt, and black pepper.
Place the salmon in the oven with the sweet potatoes for the last 10-12 minutes of roasting or until the salmon is cooked through and flakes easily with a fork.
During the last 5 minutes of cooking, bring a pot of water to a boil. Add the green beans and steam for 3-5 minutes until tender but still crisp. Drain and set aside.
Serve the baked salmon on plates with roasted sweet potatoes and steamed green beans. Add fresh lemon wedges on the side for squeezing over the salmon.
