Preheat your oven to 375°F (190°C).
Remove the giblets from inside the chicken and pat the chicken dry with paper towels. This ensures the skin gets crispy.
In a small bowl, mix together the olive oil, salt, ground black pepper, paprika, garlic powder, onion powder, dried thyme, and dried rosemary to form a paste.
Rub the seasoning paste all over the chicken, ensuring to cover the whole surface evenly. You can also carefully lift the skin and rub some seasoning underneath for extra flavor.
Cut the lemon in half and place both halves inside the chicken cavity. This adds moisture and flavor to the chicken as it cooks.
Truss the chicken by tying the legs together with kitchen twine. This helps the chicken cook more evenly.
Place the chicken on a roasting rack set inside a roasting pan. Add 1/2 cup of water to the bottom of the pan to keep the drippings from burning.
Roast the chicken in the preheated oven for 90 minutes to 2 hours, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
Remove the chicken from the oven and let it rest for at least 10 minutes before carving. This allows the juices to redistribute throughout the meat.
