  • 2 cups pineapple juice

  • 1 cup Chef Merito chicken seasoning
  • 1/4 cup sweet paprika
  • 1/4 cup granulated garlic
  • 1 tbsp cumin
  • 2 tbsp ground oregano
  • 3 tbsp black pepper
  • 3 tbsp ground coriander
  • 3 tbsp thyme
  • 4 whole bay leaves
  • 2 tsp whole celery seeds
  • 1 tsp ground rosemary
  • 1/8 tsp ground cloves
  • 1/4 cup vegetable oil
  • 1 tbsp citric acid
  • to make 5 gallons water

Instructions

In a large pot, combine orange juice concentrate, lemon concentrate, and lime concentrate with water to slightly dilute them, ensuring enough room for all ingredients to reach a total of 5 gallons.

Add pineapple juice, salt, and white sugar to the mixture, stirring until the sugar and salt are completely dissolved.

Add Chef Merito chicken seasoning, sweet paprika, granulated garlic, cumin, ground oregano, black pepper, ground coriander, thyme, bay leaves, whole celery seeds, ground rosemary, and ground cloves to the pot.

Pour in the vegetable oil and sprinkle in the citric acid, stirring to combine all ingredients thoroughly. Make sure all spices and herbs are evenly distributed throughout the marinade.

Bring the mixture to a gentle simmer over medium heat. Allow it to simmer for about 20 minutes, stirring occasionally to blend the flavors. The heat helps extract flavors from the spices and herbs.

Remove the pot from heat and allow the marinade to cool completely.

Once cooled, strain the marinade to remove solid particles and bay leaves for a smooth texture, if desired.
