Heat 1 teaspoon of vegetable oil in a large skillet over medium heat.
Add the cubed firm tofu to the skillet and cook, stirring occasionally, until the tofu is golden brown on all sides. Remove from the skillet and set aside.
In the same skillet, add the 1/2 onion (chopped) and sauté until it becomes soft and translucent.
Add 1 tablespoon of curry paste or powder to the skillet with the onions, stirring well to release the flavors and coat the onions evenly.
Pour in 1/2 cup of light coconut milk and bring the mixture to a gentle simmer.
Add the cooked tofu back into the skillet and stir to coat it with the curry sauce. Let it simmer for about 5 minutes.
Add 1 cup of spinach to the skillet, and stir until wilted.
Season the curry with salt and pepper to taste.
Serve the tofu curry hot over the cooked basmati rice.
