A comforting, bright Indian-inspired curry: tender chickpeas simmered in a lightly spiced tomato-coconut sauce with wilted baby spinach, served over fragrant basmati rice and cooled with a refreshing cucumber-mint raita. The curry balances rich coconut creaminess, bright tomato acidity, warm spices and the earthy bite of chickpeas for a restaurant-quality weeknight meal.
