Preheat the oven to 400°F (200°C).
Slice the tomatoes and place them on a baking sheet. Drizzle with olive oil, and season with salt and pepper. Roast in the oven for 20 minutes.
While the tomatoes are roasting, slice the onion and caramelize it in a pan with olive oil over medium heat until golden brown.
Season the steak with salt and pepper, then grill or pan-sear it to your desired doneness. Let it rest before slicing.
In a bowl, combine parsley, minced garlic, red wine vinegar, olive oil, and red pepper flakes to make the Chimichurri sauce.
Assemble the sandwich by layering the sliced steak, caramelized onions, and roasted tomatoes on your choice of bread. Drizzle with Chimichurri sauce.
