Dice the chicken breasts into bite-sized pieces. Season with salt, pepper, and paprika.
Peel and cube the potatoes. Thinly slice the onion and bell pepper. Peel and slice the carrots into thin rounds. Mince the garlic.
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken pieces and cook until browned on all sides but not fully cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining 1 tablespoon of olive oil. Add the onions, bell peppers, carrots, and garlic. Sauté for about 5 minutes until the onions are translucent and the vegetables begin to soften.
Add the potatoes to the skillet, stirring to combine. Add the chicken broth and dried thyme. Cover and let simmer for 20 minutes until the potatoes are tender and the chicken is cooked through. Stir occasionally to prevent sticking.
Return the chicken to the skillet and mix everything together. Cook for an additional 5 minutes until the chicken is heated through. Adjust seasoning with more salt and pepper if desired.
Serve warm, garnished with fresh thyme or parsley if available.
