Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork until smooth but still chunky. Season with salt and pepper to taste. Set aside.
Bring a medium-sized pot of water to a gentle simmer. Add the white vinegar to the water.
Crack each egg into a small bowl or ramekin. This will make it easier to slide the egg into the water.
Using a spoon, stir the simmering water in the pot to create a gentle whirlpool. Carefully lower one egg at a time into the center of the whirlpool. Poach each egg for about 3-4 minutes for a runny yolk, or longer if you prefer a firmer yolk.
While the eggs are poaching, toast the slices of whole grain bread until golden brown. You can use a toaster or a skillet with a touch of olive oil for added flavor.
Once the eggs are done, remove them with a slotted spoon and place them on a paper towel to drain any excess water.
Spread the mashed avocado evenly onto each slice of toasted bread.
Place a poached egg on top of each avocado toast. Season with additional salt and pepper to taste if desired.
