By Mckyla Miller

Total: 30 minutes

Ingredients

  • 200 g pasta
  • 1 large onions
  • 3 cloves garlic
  • 3 medium tomatoes
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika
  • 4 cups water

Instructions

1

In a large pot, bring 4 cups of water to a boil. Add a pinch of salt and the pasta. Cook according to package instructions until al dente. Drain and set aside.

2

While the pasta is cooking, peel and finely chop the onions and garlic. Dice the tomatoes into small pieces.

3

In a large pan, heat 2 tablespoons of olive oil over medium heat. Add the onions and garlic, sautéing until softened and translucent, about 5 minutes.

4

Add the diced tomatoes to the pan. Stir in the salt, black pepper, and paprika. Let the mixture simmer for about 10 minutes, stirring occasionally, until the tomatoes are soft and the flavors meld together.

5

Add the cooked pasta to the tomato and onion mixture. Toss everything together until the pasta is thoroughly coated with the sauce. Adjust seasoning with more salt or pepper to taste, if necessary.

6

Serve the Tomato and Onion Pasta Goulash hot, garnished with freshly chopped parsley if desired.
