Place the rolled oats in a small bowl and add about 2 tablespoons of hot water. Allow the oats to soak for 1-2 minutes to soften them slightly.
In a medium-sized mixing bowl, add the low-fat cottage cheese.
Drain any excess water from the oats, and add them to the bowl with the cottage cheese.
Add the pineapple chunks to the bowl.
Drizzle the honey over the mixture in the bowl.
Mix all the ingredients well until they are combined and evenly distributed.
Serve immediately in a bowl or plate, or cover and refrigerate for 30 minutes if you prefer it chilled.
