Ingredients

  • 5 oz Grilled Chicken Breast with BBQ glaze
  • 1 whole Medium Roasted Sweet Potato
  • 1 cup Green Beans
  • 2 tbsp Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Instructions

Preheat your oven to 400°F (200°C).

If not already roasted, cut the sweet potato into small cubes and coat them lightly with 1 tablespoon of olive oil, 1/4 teaspoon of salt, and a pinch of pepper.

Place the sweet potato cubes on a baking sheet lined with parchment paper. Roast in the oven for about 20 minutes or until tender and lightly browned.

While the sweet potatoes are roasting, trim the ends of the green beans if necessary. Toss them with the remaining tablespoon of olive oil and a pinch of salt and pepper.

Spread the green beans on another section of the baking sheet or a separate sheet and roast for the last 10-12 minutes of the sweet potatoes' baking time, or until tender-crisp.

Reheat the grilled chicken breast if needed by placing it in the oven during the last 5 minutes of cooking. Make sure the internal temperature reaches at least 165°F (74°C).

Serve the chicken breast on a plate with the roasted sweet potatoes and green beans arranged on the side.
