Salmon Niçoise Salad

By ashley park

Total: 25 minutes
SaladSeafoodMain Dish

Ingredients

  • 120 g Cooked salmon
  • 50 g Green beans, trimmed
  • 1 medium Small boiled potato, sliced
  • 1 large Egg
  • 2 cups Lettuce, torn
  • 10 pieces Olives, pitted
  • 3 tbsp Vinaigrette
  • to taste optional Salt
  • to taste optional Black pepper

Instructions

1

Bring a small pot of water to a boil. Carefully lower the egg into the boiling water, reduce the heat to a simmer, and cook for 8-10 minutes for a hard-boiled egg. Remove the egg, cool it under cold running water, peel, and slice into quarters.

2

In the same pot, add the green beans and blanch for 2-3 minutes until crisp-tender. Drain and immediately transfer them to a bowl of ice water to stop the cooking process. Drain again and set aside.

3

On a large serving platter, arrange the lettuce to form a base for the salad.

4

Evenly distribute the sliced boiled potato, blanched green beans, and quartered egg over the lettuce.

5

Flake the cooked salmon into large chunks and add to the salad, distributing evenly.

6

Scatter the olives over the top of the salad.

7

Drizzle the vinaigrette over the entire salad. Season with salt and black pepper to taste, if desired.

8

Toss gently to combine or serve as is, allowing each person to mix their portion.
