Begin by boiling the baby potatoes in a small pot of water until fork-tender, approximately 10-12 minutes. Drain and allow them to cool, then slice them in half.
Blanch the green beans by placing them in boiling water for 2-3 minutes. Quickly transfer them to an ice bath to stop the cooking and preserve color. Drain and set aside.
Slice the boiled egg into quarters.
In a large bowl, combine the mixed salad greens, sliced boiled potatoes, blanched green beans, and quartered boiled egg.
Flake the canned or grilled salmon into bite-sized pieces. Add it to the salad mixture.
Drizzle the olive oil & lemon dressing over the salad. Season with salt and black pepper to taste.
Gently toss all the ingredients together until well combined.
