In a medium saucepan, combine 2 cups of whole milk and 1/2 cup of sugar. Heat the mixture over medium heat until it begins to steam, stirring occasionally.
In a small bowl, mix 2 1/2 tablespoons of cornstarch with 1/4 cup of cold milk to create a slurry. Make sure there are no lumps.
Slowly whisk the cornstarch slurry into the hot milk and sugar mixture. Continue to cook, stirring constantly, until the mixture thickens and begins to boil. This will take about 5 minutes.
Remove the saucepan from the heat and stir in 2 tablespoons of unsalted butter, 1 teaspoon of vanilla extract, and 1/8 teaspoon of salt until everything is well combined and the butter is fully melted.
Pour the pudding into individual serving dishes or a large bowl. Cover with plastic wrap directly on the surface of the pudding to prevent a skin from forming.
Chill the pudding in the refrigerator for at least 2 hours before serving. Serve cold.
