Falafel Wraps with Tahini, Pickles, & Tabbouleh

Ingredients

  • 12 pieces falafel
  • 4 pieces whole-wheat flatbreads
  • 1/2 cup tahini sauce
  • 1 medium cucumber
  • 1 large tomato
  • 1 bunch parsley
  • 1/2 cup bulgur
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

Cook the bulgur according to package instructions. Once cooked, let it cool to room temperature.

Finely chop the cucumber, tomato, and parsley. Add them to a large mixing bowl.

Add the cooled bulgur to the bowl with the chopped vegetables and parsley.

Drizzle the lemon juice and 1 tablespoon of olive oil over the bulgur and vegetables. Add salt and black pepper, and mix well. This is your tabbouleh.

Warm the flatbreads in a dry skillet over medium heat for 1-2 minutes on each side or until lightly toasted.

Heat the falafel in the oven or microwave until warm, if not freshly made.

Spread about 2 tablespoons of tahini sauce evenly over each flatbread.

Place 3 pieces of falafel in the center of each flatbread. Top with tabbouleh.

Wrap the flatbread around the filling, folding the bottom up before folding in the sides to secure the wrap.

Serve the wraps with extra tahini sauce on the side for dipping if desired.
