In a small bowl, combine 1 tablespoon of soy sauce, 1 teaspoon minced fresh ginger, and 1 teaspoon minced garlic to create the soy-ginger glaze.
Heat 1 teaspoon of vegetable oil in a skillet over medium-high heat.
Add the sliced lean beef to the skillet and cook for about 3-4 minutes until browned and cooked to your liking. Season with a little salt and pepper, if desired.
Pour the soy-ginger glaze over the browned beef in the skillet and toss to coat evenly. Cook for an additional 1-2 minutes until the glaze is slightly thickened and the beef is well-coated.
Place 1 cup of cooked brown rice in a bowl.
Arrange 1 cup of steamed or roasted broccoli and carrots over the cooked brown rice.
Top the rice and vegetables with the glazed beef slices.
Serve immediately while warm, stirred gently to combine all the flavors in each bite.
