A satisfying, restaurant-style warm bowl that layers nutty brown rice and hearty lentils with caramelized roasted carrots, zucchini and red bell pepper. Bright tahini-lemon dressing and a touch of smoked paprika add creaminess and smoky depth while baby greens give freshness — a comforting, protein-rich vegan bowl with contrasting textures and bold, balanced flavors.
Preheat the oven to 425°F (220°C). Arrange the carrots, zucchini and red bell pepper on a rimmed baking sheet in a single layer. Toss with 1 tablespoon olive oil, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Roast for 20–25 minutes, turning once halfway through, until edges are lightly caramelized and vegetables are tender. Roasting at high heat concentrates sweetness and creates Maillard browning that adds savory depth to the bowl.
