Bring a large pot of salted water to a boil, and cook the pasta according to package instructions until al dente. Drain and set aside.
Dice the tomatoes, potatoes, and sweet potatoes into small cubes. Thinly slice the cabbage, radishes, and celery. Cut the broccoli into small florets. Grate the cheese. Set all prepared ingredients aside.
In a large pan, heat the olive oil over medium heat. Add the diced potatoes and sweet potatoes. Sauté for about 5 minutes or until they start to soften.
Add the sliced cabbage, broccoli florets, celery, and radishes to the pan. Continue to cook while stirring occasionally for another 5-7 minutes until vegetables are tender-crisp.
Add the diced tomatoes and ham to the pan. Season with salt and pepper, if desired. Let it cook for 3-4 minutes, allowing the tomatoes to release their juices and the ham to warm through.
Meanwhile, cook the couscous by adding it to a small bowl, covering it with boiling water (about 120 ml or 1/2 cup), and covering the bowl with a plate. Let it sit for 5 minutes before fluffing with a fork.
Simultaneously, cook the rice according to package instructions, using slightly less water than called for to keep it firm. Usually, this involves boiling the rice for about 10-12 minutes in salted water.
Once the vegetables are ready, add the cooked pasta, couscous, and rice to the pan. Gently mix everything to combine well.
Sprinkle grated cheese over the pasta and vegetable mixture. Turn off the heat, cover the pan, and let the cheese melt for 2 minutes.
