Prepare the ingredients: Peel and mince 4 cloves of garlic. Dice 1 medium onion and 300g of tomatoes. Cut 400g of chicken breast into bite-sized pieces.
In a large pan, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and diced onion, sauté until the onion becomes translucent, about 3-4 minutes.
Add the diced tomatoes to the pan and cook for 5 minutes until they start to break down.
Add the chicken pieces to the pan. Season with 1 teaspoon of salt and 1/2 teaspoon of black pepper. Stir well and cook until the chicken is browned and cooked through, about 10-12 minutes.
While the chicken is cooking, rinse 1 cup of rice under cold water until the water runs clear. In a separate pot, bring 2 cups of water to a boil, add the rice, and cook according to the package instructions until fluffy and tender, usually about 15-18 minutes.
Once the chicken is cooked, turn off the heat and let it sit for a few minutes to absorb the flavors. Serve the chicken mixture over a bed of the cooked rice.
