Dice the chicken breast into bite-sized pieces. Season with salt and pepper.
Deseed and chop the red and green bell peppers and tomatoes into small chunks. Mince the garlic.
Heat 1 tablespoon of olive oil in a large pan over medium-high heat. Add the chicken pieces and cook until browned. Remove the chicken from the pan and set aside.
In the same pan, add the remaining tablespoon of olive oil. Sauté the minced garlic until fragrant, then add the chopped bell peppers and tomatoes. Cook for 5 minutes until the vegetables are softened.
Add the chicken back into the pan with the vegetables. Pour in the water and bring to a simmer.
Rinse the rice under cold water to remove excess starch. Add the rice to the pan, stir to combine, and cover with a lid.
Reduce the heat to low and let simmer for 20 minutes or until the rice is cooked through and has absorbed the liquid.
Fluff the rice with a fork, adjust seasoning to taste, and serve hot.
