In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper to create the marinade.
Place the chicken breasts between two sheets of plastic wrap and gently pound to an even thickness using a meat mallet or rolling pin.
Place the chicken breasts in a shallow dish and pour the marinade over them. Cover and let marinate for at least 15 minutes at room temperature or up to an hour in the refrigerator.
Preheat the grill or a grill pan over medium-high heat.
Remove the chicken from the marinade and let excess marinade drip off before placing on the grill.
Grill the chicken breasts for 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C).
Remove the chicken breasts from the grill and let rest for a few minutes before serving.
