Begin by preparing the marinade. In a small bowl, mix olive oil, lemon juice, minced garlic, dried thyme, salt, and black pepper.
Place the chicken breasts in a plastic bag or shallow dish and pour the marinade over them. Make sure the chicken is well-coated. Let it marinate for at least 10 minutes while you prepare the grill.
Preheat your grill to medium-high heat. If using a grill pan, heat it over medium-high heat on the stovetop.
Remove the chicken from the marinade, allowing excess marinate to drip off. Place the chicken on the grill or grill pan.
Grill the chicken for about 6-7 minutes on each side or until fully cooked through and juices run clear. The internal temperature should reach 165°F (74°C).
Remove the chicken from the grill and let it rest for a few minutes before serving.
