Ingredients

  • 2 whole ripe avocados
  • 4 slices whole grain bread
  • 4 whole large eggs
  • to taste n/a salt
  • to taste n/a pepper
  • optional n/a red pepper flakes
  • 1 tablespoon fresh lime juice

Slice each ripe avocado in half, remove the pit, and scoop the flesh into a bowl. Mash the avocados with a fork until creamy, but still chunky. Mix in salt, pepper, and 1 tablespoon of fresh lime juice. Set aside.

Bring a pot of water to a gentle simmer over medium heat. Add a pinch of salt to the water. Crack one egg into a small bowl or ramekin.

Create a gentle whirlpool in the water by stirring with a spoon. Carefully slide the egg from the bowl into the center of the whirlpool. Poach the egg for about 3-4 minutes or until the white is set but the yolk remains soft. Remove the egg with a slotted spoon and drain on a paper towel. Repeat with the remaining eggs.

While the eggs are poaching, toast the slices of whole grain bread to your desired level of crispiness.

Spread the mashed avocado mixture evenly on each slice of toasted bread.

Top each avocado toast with a poached egg. Season with additional salt, pepper, and optional red pepper flakes. Serve immediately.
