Ingredients

  • 4 oz shrimp
  • 2 oz dry linguine
  • 1 cup crushed tomatoes
  • 3 cloves garlic
  • 2 tbsp olive oil
  • 5 leaves basil
  • 2 cups mixed green salad
  • 2 tbsp vinaigrette
  • to taste varies salt
  • to taste varies black pepper

Instructions

Bring a pot of salted water to a boil. Add the dry linguine and cook according to package instructions until al dente. Drain and set aside.

While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

Add the crushed tomatoes to the skillet and stir in the basil leaves. Season with salt and black pepper to taste. Reduce the heat and let the sauce simmer for about 5 minutes.

In a separate pan, heat the remaining tablespoon of olive oil over medium-high heat. Add the shrimp, season with salt and pepper, and cook until pink and opaque, about 3–4 minutes.

Add the cooked shrimp to the tomato garlic sauce and stir to combine. Let it cook for another 2 minutes to meld the flavors.

Add the cooked linguine to the skillet with the shrimp and tomato sauce. Toss well to ensure the pasta is evenly coated.

Prepare the side salad by tossing the mixed greens with vinaigrette in a large bowl. Serve alongside the shrimp linguine.

Serve the Shrimp Linguine hot, garnished with additional basil leaves if desired, and enjoy with the prepared side salad.
