Juicy, lemon-rosemary roasted bone-in chicken thighs served with silky mashed sweet potatoes and bright, crisp green beans. The chicken is roasted until the skin is golden and fragrant from garlic and lemon, while the sweet potatoes are whipped with butter and a touch of lemon for brightness — a balanced dinner that feels restaurant-worthy but is simple enough for a weeknight.

While the chicken roasts — start the potatoes: Put the cubed sweet potatoes in a medium pot and cover with cold water by about 1 inch. Add 1/2 tsp salt.
