Preheat your oven to 400°F (200°C).
Rinse the quinoa under cold water. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa and reduce heat to low. Cover and simmer for 15 minutes, until water is absorbed. Fluff with a fork and set aside.
While the quinoa is cooking, trim the woody ends off the asparagus. Toss the asparagus with 1 tablespoon olive oil, 1/4 teaspoon salt, and a pinch of pepper. Place them on one side of a large baking sheet.
Place the salmon fillets on the other side of the baking sheet. Drizzle the fillets with 1 tablespoon olive oil and season with the remaining salt and pepper. Top each fillet with 2 lemon slices.
Bake the salmon and asparagus in the preheated oven for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Once cooked, serve each salmon fillet with a serving of quinoa and roasted asparagus. Drizzle with the remaining 1 tablespoon olive oil for extra flavor.
