Baked Salmon, Quinoa & Roasted Asparagus

Ingredients

  • 150 g Salmon fillet
  • 3/4 cup Cooked quinoa
  • 100 g Asparagus
  • 1 tbsp Olive oil
  • 1 whole Lemon
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1 tbsp Fresh dill

Instructions

Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.

Place the salmon fillet in the center of the baking sheet. Drizzle with half of the olive oil, and season with salt and pepper.

Trim the asparagus and arrange it around the salmon on the baking sheet. Drizzle with the remaining olive oil and sprinkle with salt and pepper.

Slice the lemon in half. Squeeze the juice from half of the lemon over the salmon and asparagus. Cut the remaining half into thin slices and place them on top of the salmon.

Bake in the preheated oven for about 15 minutes or until the salmon flakes easily with a fork and the asparagus is tender.

While the salmon is baking, prepare the quinoa by mixing it with freshly chopped dill in a small bowl.

Remove the baking sheet from the oven. Serve the salmon with the roasted asparagus and a side of the dill quinoa. Garnish with extra dill and lemon wedges if desired.
