Start by cooking the soba noodles according to package instructions, then drain and rinse with cold water to stop the cooking process. Allow them to cool.
Cook edamame in boiling salted water for about 5 minutes if they're not already cooked, then drain and set aside.
Julienne the cucumber and carrot into thin strips.
In a large mixing bowl, combine the cooled soba noodles, cooked edamame, julienned cucumber, and carrot.
In a small mixing bowl, whisk together the sesame dressing, soy sauce, and rice vinegar. Adjust flavor with salt and black pepper as needed.
Drizzle the dressing over the soba noodle mixture and toss everything together until all ingredients are well-coated.
Chop the cilantro and add it to the salad along with the sesame seeds for garnish.
