Rinse the rice under cold water until the water runs clear. Set aside to drain.
Dice the tomatoes and onion. Mince the garlic cloves.
Cut the chicken breast into bite-sized pieces. Season with salt and pepper.
Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
Add the diced onion to the pan and cook until translucent, about 3 minutes.
Add the chicken pieces and cook until they are browned and cooked through, about 7-8 minutes.
Add the diced tomatoes to the pan and cook for an additional 5 minutes until the tomatoes have softened.
In a separate pot, add 1 tablespoon of olive oil over medium heat. Add the rinsed rice and stir for 2 minutes to toast slightly.
Add 3 cups of water to the rice, bring to a boil, then reduce the heat to low and cover. Simmer for about 18 minutes or until the rice is cooked and water is absorbed.
Serve the garlic tomato chicken over the cooked rice on individual plates. Garnish with fresh herbs if desired.
