In a large skillet, heat a drizzle of oil over medium heat.
Add the diced onion to the skillet and sauté for 3-4 minutes until it becomes translucent.
Stir in the diced bell pepper and cook for an additional 2-3 minutes until the bell pepper softens.
Increase the heat to medium-high and add the ground beef to the skillet. Break it up with a spatula as it cooks.
Cook the beef for about 5-7 minutes or until it is thoroughly browned and cooked through. Drain excess fat if necessary.
Sprinkle the taco seasoning over the cooked beef, and add salt and pepper to taste. Mix well to combine.
Reduce the heat to low, and sprinkle the shredded cheese evenly over the beef mixture. Cover the skillet with a lid for about 2-3 minutes until the cheese has melted.
Remove the skillet from heat. Serve topped with sour cream.
