Heat the olive oil in a large skillet over medium heat. Add the cauliflower rice and sauté for about 5-7 minutes, stirring occasionally, until it is tender and begins to slightly brown. Season with salt and pepper to taste.
While the cauliflower rice is cooking, in a small bowl, mash the avocado with a fork. Mix in the juice from half the lime, a pinch of salt, and pepper to taste to make the guacamole.
Once the cauliflower rice is done, remove it from the skillet and set aside. In the same skillet, add the cooked ground beef. Sprinkle with a pinch of salt, pepper, and ground cumin. Stir for 2-3 minutes to reheat and infuse the flavors.
Prepare the bowl by layering the cauliflower rice at the bottom. Top with the reheated ground beef.
Add the pico de gallo and freshly made guacamole on top of the beef.
Garnish the bowl with chopped cilantro. Optionally, squeeze additional lime juice over the top for extra flavor. Serve immediately.
