Preheat your oven to 375°F (190°C).
Mince the garlic and finely chop the parsley.
In a small saucepan, melt the butter over low heat. Add minced garlic and sauté until fragrant, about 1-2 minutes. Remove from heat.
Season the chicken breasts with salt and pepper on both sides.
In a large ovenproof skillet, heat olive oil over medium-high heat. Add the chicken and sear on both sides until golden brown, about 4-5 minutes per side.
Pour the melted garlic butter over the chicken in the skillet.
Sprinkle the cheese evenly over the chicken breasts.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
Remove from oven and let it rest for a few minutes. Garnish with chopped parsley before serving.
